Nougat is a typical Christmas holiday dessert, but the Spanish company has given it a new identity, transforming it into an everyday dessert that can be enjoyed at any time of day throughout the year.
How is Alicante nougat produced?
According to the specifications for Alicante Nougat, almonds must be at least 46% (this one by Pablo Garrigòs Ibà nez goes as high as 68%) and are lightly toasted in rotating drums, called boixets: once the desired toasting point is reached, diluted egg white and rosemary honey are added until a fluid and compact amalgam is created. Then the resulting mass is poured into circular molds and covered with wafers: delicacy and crunchiness for a unique and incomparable product.
