Made from a mix of meat and fat, garnished with sweet paprika, Morc贸n is one of the traditional Iberian cured meats as it contains all the typical flavors of Spain: deep red in color and with an inebriating aroma, it cannot be missing from the Iberian charcuterie board!
What distinguishes it from chorizo is its squat, round shape. The difference with chorizo comes mainly from its processing: chorizo is processed with a small intestine, Morc贸n is processed with a large intestine.
What makes the Iberian Bellota pig special?
The Iberian bellota pig is an animal fed exclusively on acorns (bellotas in Spanish) and natural grasses and raised in pastures, in semi-freedom, grazing in fields and exercising like wild animals.
During the “montanera” season, from September to February, the “dehesa” trees produce their fruit, acorns, which the pigs devour with gusto.
Acorns are a highly energetic fruit and contain a large amount of oleic acid. This way of feeding the animals makes for the best Iberian hams.
