Lomo de Bellota Admiracion is one of Spain’s most famous cured pork products. It is the fillet of pork that is sprinkled with salt, paprika and other spices: it is then stuffed into natural casings and left to mature three or four months in special drying rooms. The outside surface is light red, the inside is bright red and has the typical veins when cut. The Admiracion Line guarantees the highest excellence.
What makes the Bellota Iberian pig special?
The Iberian bellota pig is an animal fed exclusively on acorns (bellotas in Spanish) and natural grasses and raised in pastures, in semi-freedom, grazing in fields and exercising like wild animals.
During the “montanera” season, from September to February, the “dehesa” trees produce their fruit, acorns, which the pigs devour with gusto.
Acorns are a highly energetic fruit and contain a large amount of oleic acid. This way of feeding the animals makes for the best Iberian hams.
